Stillwater Restaurant

One of Tasmania's most awarded restaurants

Established in 2000 and housed in an 1830s flour mill right on the banks of the Tamar River, Stillwater is a casual fine dining restaurant that focuses on local produce with exceptional service.

With almost entirely local produce used, the seasons dictate what ends up on any given plate at Stillwater. The kitchen team maintains a close relationship with suppliers, with communication going both ways - some producers even asking what they can plant that they would like to use.

The Stillwater team prides themselves on their knowledge of what they serve, and being able to take guests on a journey; whether that’s explaining where the Cape Grim water is from and all about the ‘Rain farmer’, or where the carrots are grown and harvested, to the Chef’s interpretation of perhaps a classic dish using local produce.
